Actually I might have a better theory. The Grimore has Alice herself within it. She says that she never goes all out, and as a way to possibly prevent her from accidentally unleashing her full power she sealed part of it within the Grimore. As for why she looks older than her PC-98 days, she aged a bit as a side-effect of this. This is evident in the doujin game, Mystical Chain. The true final boss is

an entity known as Mystic Records, which has a striking resemblance to PC-Alice.
