UNTIL NOW! Okay it's not a touhou remix but some of you might still like it. In fact you can maybe perhaps expect something touhou-y in a month or two.

As for breakbeats, you can download a lot of Amen Break samples from the web, and just put those under your music.
for example, here: http://rhythm-lab.com/amen_breaks
you can also find the basic amen break samples, cut them up into 8 sections and swap/repeat those parts.
I would advise you to first try to imitate rhythms in your favourite breakbeat songs this way. After that, you can try creating your own rhythms :D
