For aesthetics, UFO's version of MASUTAAAAAAAH SUPAAAAAAAAAAAAKU. It's absolutely beautiful to watch.

Honorable mention to Portrait of Strange Relic's bombs for originality.
I love drawing shapes before they all fly towards the enemies.

As for in an actual Touhou game, I'd say Yuyuko's last spell.

Now I'm not all that big a fan of these. A couple days ago I probably would have given it to Doll Judgment. However, after looping it for hours on end, I am convinced that Bet On Death, the theme of the obscure and what-the-hell-is-this Five Magic Stones from SoEW, is by FAR the best Stage 3 boss theme. Take a listen, if you haven't.
