I can't beat the Stage 5 boss (I won't spoil her name) in time to get a good ending.
Is that being caused by me playing on easy or am I too slow?
Any answer would be appreciated

I'm assuming that this is Story of Eastern Wonderland, as it's technically the second Touhou game. You can't get a good ending if you play on easy.

But if you mean Perfect Cherry Blossom, it's the same with SoEW, where you can't easy clear and get a good ending.

Hey, I've cleared PCB on Easy enough times to know that you can totally get a good ending on this difficulty. As for SoEW, I don't have much first hand experience, but I've seen Easy runs that reach a good ending on Youtube (like this one). And the wiki says:

To view the good endings, finish the game on any difficulty without continuing once.
