do it, STGT is about exactly that; playing games you never really got a chance to play before
that is, in my opinion, a silly mindset and whoever told you that is not good at video games nor does he care. whether you want to be that or otherwise is entirely at your discretion; I say get good at games you like so you can feel good because of that, and so others can be assured that such things are possible
yes, Psikyo games (save for 2, maybe 3) have random stages of some sort; the games that have such have 4 of these stages, some games will pick 3 of these while others will pick all 4 (the latter applying mostly to the Strikers games)
