I don't know if there's a similar thread already, but I decided to make a topic to discuss who are the hardest and easiest bosses from each stage serial number in the series. So, let's start the discussion!
Easiest:
Stage 1: Rumia. her danmaku are easy to avoid and she has easy spellcard attacks too.
Stage 2: Mystia Lorelei. She has easier spell cards than normal attacks, actually? reducing the vision field helps diminishing the amount of bullets in screen.
Stage 3: Nitori Kawashiro. Her bullets are kinda slow compared to other stage 3 bosses.
Stage 4: Minamitsu Murasa. Easy spell card attacks, the only problem about her is the survival attack.
Stage 5: Sanae Kotiya. She is the easiest for sure, no strategy needed.
Stage 6: Kanako Yasaka. She is quite easy in comparasion to the other stage 6 bosses.
Extra: Nue Houjuu. She is even easier than suwako, many fans agree with this.
Hardest:
Stage 1: Yamame Kurodani. Considering the SA bosses are relatively harder than the others.
Stage 2: Kogasa Tatara. Especially her final spell card, which is pretty troublesome.
Stage 3: Alice Margatroid. She is on par with a stage 4 boss, and it?s difficult to escape the dolls bullets.
Stage 4: Marisa Kirisame. The battle is too prolongated and difficult, too many annoying stars over the screen.
Stage 5: Shou Toramaru. Damn curvy lasers, you need fast reflexes against her.
Stage 6: Remilia Scarlet. Every stage 6 boss is hard, but remilia stay prominent with her danmaku, imo.
Extra: Koishi Komeiji.
Easiest (PC-98):
Stage 1: Sara. LOL, I mean? most of her bullets are not even directed at you.
Stage 2: Kurumi. She never caused me much trouble.
Stage 3: Elly. Especially the first part which she spams easy to dodge tiles.
Stage 4: Yuki & Mai. Regardless of who you beat first.
Stage 5: Yuka. Differently from her awakened state, she is much less difficult on stage 5.
Stage 6: Shinki.
Extra: loli alice. The battle is prolonged and tiresome, but she offers less problems than the others PC-98 extra bosses.
Hardest (PC-98):
Stage 1: Rika. Yet, still pretty easy.
Stage 2: Luize. Lack of options.
Stage 3: The 5 Magical Stones. Mostly Because the boss battle is poorly programmed
Stage 4: Reimu Hakurei. Not as hard as her IN counterpart, but still quite tough.
Stage 5: Yumeko. Definitively one of the toughest stage 5 bosses, with fast paced blades and no patterns.
Stage 6: Mima.
Extra: Gengetsu. Probably one of the hardest bosses in the series.

Stage 4: Patchouli.
Stage 5: Shou. But only because I already fought her so many times.
Stage 6: Byakuren.
Extra: Nue.
Hardest:
Stage 1: Nazrin.
Stage 2: Parsee.
Stage 3: Ichirin/Unzan. F***ung brofists.
Stage 4: Aya. OH MY GOD, Aya.
Stage 5: Orin. Just... Orin.
Stage 6: Utusho. There isn't ONE spell card I mastered so far. And I don't wanna start about some of her noncards...
Extra: Koishi Komeiji.

Windows first.
Easiest:
S1: Letty. Demarcation can still kill me; Table Turning can't. Also Wriggle.
S2: Hina or Parsee. I can perfect both (though I usually don't because of DERP).
S3: Nitori. If I ever bothered to work out Spin the Cephalic Plate, she'd be a perfect.
S4: Prismrivers. Merlin's goddamn opener aside, they're quite doable.
S5: Sanae. Pfffft.
S6: Kanako. Opener and VoWG are the only truly hard parts.
Extra: Suwako. Not so bad, froggy. Mokou's reasonably doable also.
Hardest:
S1: Yamame. Graag.
S2: Kogasa. You're kidding me, right?
S3: Probably Alice or Meiling.
S4: Aya. AAAAGGHIDGISJGIOJOSJGJSIDFGJIS
S5: Orin. Damn cat.
S6: Remilia. Friggin'. Scarlet.

Hardest:
Stage 1: Yamame
Stage 2: Kogasa
Stage 3: Alice (Perfect Cherry Blossom)
Stage 4: Satori
Stage 5: Syou
Stage 6: Byakuren (in terms of danmaku, not surviving in the first place)
Extra: Evil Eye Sigma

There is no Stage 6 in SoEW guys, so placing Mima there is technically incorrect as stated before a bit. Use "Final Stage" to avert this :V
Also, if you're going to say Patchouli, Satori, or even the Prismrivers, then you probably should state which one (e.g. ReimuA!Satori is a lot more different than ReimuB!Satori; they all have varying difficulties you know).
Speaking of difficulties, some bosses are harder at certain difficulties than others, and SoEW Lunatic bosses are the same as their Hard counterpart.

My theory: SoEW cuts out the stage 4 boss and the stage portion of stage 5, meaning that it skips straight from stage 4 to the stage 5 boss (Marisa).
And so this has more point, correcting my post here by saying that I meant Lyrica Prismriver and Satori Yukari.

1: Minoriko. I could beat her with my eyes closed maybe!
2: Probably Cirno and no I don't play easy mode ><
3: Nitori
4: I'm pretty convinced that there's no such thing as an easy stage 4 boss.
5: Reisen
6: Eirin
Hardest
1: Yamame
2: KOGASA AAAAA
3: Yuugi
4: Prismrivers (all three of them are RAGE but Lunasa seems to be the worst for me)
5: Orin
6: Remilia
As for extra, the only one I've managed to unlock is Mokou so I wouldn't know '3'

1 - Minoriko, which makes her the second most pathetic god ever, next to her sister.
2 - Cirno, because Icicle Fall is lol.
3 - Keine, Because everyone else has spam bullets and BIG bullets. She's a little calmer.
4 - Marisa, but only by a little bit...
5 - Reisen, because her ability to make people mad is fail.
6 - Kaguya, indeed.
Extra - Mokou, sadly enough.
Hardest
1 - Nazrin, because she's awesome.
2 - Parsee, but Kogasa's a close second.
3 - Yuugi, and HER SAKE NOT EVEN DROP!
4 - Prismriver, simply because.
5 - Shou, because curving lasers are a sin against nature.
6 - Remilia. REMILIA.
Extra - Flandre. I haven't faced much of her, or many other extras, mind you, but I can tell she's tough.

Easiest:
st1 - Rumia. Barely ever forces me to reset.
st2 - uhh.....Cirno? Mystia has her second nonspell and Chen has Kimontonkou and some other crap.
st3 - Meiling....yeah. Alice can be mean and Keine is bullshit.
st4 - Prismrivers. Too easy, even for Lunatic.
st5 - Sanae. Probably thanks to the ridiculous bomb stock, but after stage 4, Sanae is pretty damn easy.
st6 - Yuyuko. Nothing overly hard or most can be done with 1 bomb.
EX - Nue. Except for Grudge Bow, most of her spellcards are too easy.
Hardest:
st1 - Nazrin. Bullshit all over.
st2 - Kogasa. Wall crap, clippy stuff, pure bullshit all over.
st3 - Ichirin. Goddamnit.
st4 - Murasa. 2 ridiculous spellcards and 1 bullshit nonspell.
st5 - Either Shou or Orin. Shou probably isn't THAT bad, even though her nonspells are pure luck.
st6 - Byakuren. Remi can be hard, but Byakuren has a whole arsenal of dick moves.
EX - Maybe Koishi, but that's probably because of midboss Sanae. I'd say Alice.

On normal difficulty (still haven't tried hard UFO, and lunatic MOF+ so..yeah)
Easiest:
Stage 1: Spider lady boss in SA
Stage 2: Cirno (as long as you remember her fast shotgun at the start >=P)
stage 3: uhh. Keine I guess
stage 4: Captain motherfucker muramasa or whatever her name is. I mean, I spellcapped all her cards on my first try without ever seeing her!
stage 5: Reisen (used to be hard for me, but now I know what to do on each of the red eyes crap so it's a breeze)
stage 6: Probably Yuyuko, maybe Utusho. I find Utusho to be harder, but to be fair, I've only played SA 1/4 as much (at most) as the 2nd least played Touhou (not counting UFO), so maybe Utusho if I played it as much.
Ex: Mokou
Hardest:
Stage 1: Letty. They're all really easy really, but sometimes her white snow-laser thingies can really sneak up on you.
Stage 2: Mystia I guess. The whole darkness thing makes her seemingly difficult for a stage 2 boss.
Stage 3: Yuugi. oh god Yuugi.
stage 4: Patchy. I practiced stage 4 EoSD to DEATH, and I still find myself bombing and/or dying to her sometimes, argh! Maybe it's just a rank thing though since I pretty much always get to her without using a bomb or death at that point of the game.
stage 5: Orin, duh.
stage 6: Might be due to no practice, but Baikuren, or whatever her name is. If it's just due to lack of practice, then Kaggy probably.
Ex: Koishi

Please keep in mind I am a normal mode player when reading these.
Easiest:
1-Rumia
2-Mystia
3-Nitori (amusingly I'm the only one among my friends who has no problems against her)
4-Patchouli (cop-out choice, really... All the stage 4 bosses murder me, and Patchy just does it the least somehow (and the Prismrivers are far too clipdeathy for me to vote them))
5-Reisen (though this is likely more because I have played her stage way more than Sanae's, since I love Reisen's fight, stage, and game so much)
6-Yuka (the only final boss that doesn't tear me to ribbons YES THAT INCLUDES KANAKO AND UTSUHO)
Ex-No Extra boss is easy for me. Not even PC-98 ones.
Hardest:
1-Yamame
2-Chen (CHEEEEEEEEN murders me worse than Kogasa could ever hope to do)
3-Ichirin (BROFIST) and Yuugi (for loving to clip me in her nonspells, Storm on Mt. Ooe, and Knockout in Three Steps, sometimes all in a single run)
4-Satori (Alice!Satori results in me having far too little power, forcing timeouts that I don't want, meaning even less power, Patchy!Satori forces me against Philosopher's Stone and Princess Undine, and Nitori!Satori is way harder than the real Nitori ever was)
5-Orin (I can handle Shou better than her and thats REALLY saying something...)
6-All the Windows final bosses, and yes, that includes Utsuho and Kanako. What can you expect from someone incapable of capturing Resurrection Butterfly?
Ex-*headdesk* EVERY *headdesk* SINGLE *headdesk* ONE *headdesk* IN *headdesk* EXISTANCE (NOTE: I've yet to unlock SA and UFO extra but I already know for a fact Nue and Koishi will be tearing me apart just as badly as any other)
EDIT: For the record, I'm not really counting SEW, HRP, or the vs shooters for this.

All on Normal mode, apart from SA and UFO which I have only managed to clear on Easy so far.

Stage 3 - Keine
Stage 4 - Murasa
Stage 5 - Sanae
Stage 6 - Kaguya
Hardest:
Stage 1 - Yamame
Stage 2 - Kogasa
Stage 3 - Ichirin
Stage 4 - Patchouli

Stage 6 - Remilia
No Extra bosses as I have only unlocked Ran and Mokou and have beaten neither of them. Mokou seems to be the more doable of the two, though...

Easiest:
Stage 1 - Rumia
Stage 2 - Mystia
Stage 3 - PC-98 Alice
Stage 4 - Prismrivers (after some thought... none of them are really that easy)
Stage 5 - Reisen (for being a Stage 2 boss with some extra health bars)
Stage 6 - Kanako
Extra - Flandre (probably because I've played that stage way too much :V)
Hardest:
Stage 1 - Nazrin (I don't care if her final card is memorizable, that sort of density and a timeout phase which will damn near always start should not be a Stage 1 attack)
Stage 2 - Kogasa
Stage 3 - Ichirin
Stage 4 - PC98 Reimu (dear God what is that bullshit)
Stage 5 - Shou
Stage 6 - Kaguya (ate around half of my total lives for my 1cc)
Extra - ...Lately, it's been Mugetu/Gengetu. Seriously. :V

For perspective: Normal mode, never played the PC-98's, and I've only played UFO a few times so my only memory of it is that Ichirin is awesome. Also never beaten St. 5 SA. =(
Easiest: (AKA, MoF All-Stars)
1. Rumia
2. Hina
3. Meiling. Nitori is a very close second.
4. Aya.
5. Sanae.
6. Kanako
EX. Not sure. I can most consistently beat Mokou, but I blew through Suwako in the fewest attempts. If anything, Suwako just because she doesn't have Fujiyama Volcano.
Hardest:
1. Yamane. She's almost threatening!
2. Parsee.
3. Keine.
4. Lily White. Wait. Marisa (IN).
5. Orin. Damn SA's continue system. >_<
6. Yuyuko.
EX. Flandre. Basically by default because she's the only one I've gotten to and not beaten.

Stage 2: Parsee (IT'S A TRICK BOSS ON STAGE 2!)
Stage 3: MS Alice (streaming-that-isn't-hard)
Stage 4: Prismrivers
Stage 5: Reisen (loltricks)
Stage 6: Utsuho/Kanako
EX: Gengetsu/Gengetu (Mugetsu+Gengetsu would be on par with Flan/Ran/Mokou/Suwako/Koishi/EXAlice)
Hardest:
Stage 1: Yaname (only stage 1 boss I bomb regularly)
Stage 2: Kogasa (Stage 5 cards on stage 2)
Stage 3: Ichirin (lol)
Stage 4: MariA Patchouli
Stage 5: Shou / Rin / Yumeko
Stage 6: Remilia / Byakuren
EX: Yukari (by process of "which one can't I do on a random run", and it's Yukari because I can't be damed to memorize her last card)
No SoEW because it's the game itself that makes stuff harder than it should be.

I don't see a single mention of Yukari. I know it's because she's the only one in all of Touhou for her Phantasm category, but I'd still like to know how she stacks up against the rest.

Er...yes? I mean, it's no Wizard Fox Thoughts, but it's not even threatening until maybe 10-12 seconds left. One bomb is the most it takes.

Yukari is 80% memorization. Once you know the "tricks" to her attacks - and given that you just tripped over every one of those attacks fighting Ran, that shouldn't take long - there's only a little more to go. The fight only really starts to goes to heck at Boundary of Humans and Youkai.
She's more or less in the middle of the pack, I guess - which is why you haven't seen her in hardest/easiest lists. I believe this board has seen one or two people who couldn't consistently 1cc Normal but have beaten Yukari.

Yeah, anyone who's beaten enough extra stages knows that there's no real reason to judge Yukari differently from other extra bosses. In my opinion Yukari is in the upper tier of extra bosses, but still manageable, especially with all the lives you're given.

I registered just because I felt the need to post this.
I have not once 1cc'd Perfect Cherry Blossom (I play normal, but I havn't done it on easy either >.>) and have beaten Yukari 3 or 4 times.
Just thought I'd share that :)

Isn't this because most Extra bosses are largely about figuring out the gimmick to their cards and exploiting that?

Isn't this true for Extra bosses in general though? All the ones I've beaten are mostly 'tricky' spellcards with a few tough ones thrown in. I think that's why I'm finding Flandre harder, is most of her cards seem to be 'actual dodging'.

Yukari is probably the 2nd easiest IMO, not including Ran that is. But, I really like playing against her, so maybe it's just my insane amount of practice with her.

Stage 2- Cirno
Stage 3- Ichirin (well, more the stage)
Stage 4- Marisa (SoEW)
Stage 5- Youmu
Stage 6- Kanako (I have to bomb everything except MoF/VoWG and Mad Dance)
EX- Koishi

S4 : Patchy (Lazors ! DonutBubble danmaku ! Mercury Poison ! Green Storm ! Sylphae Horn ! Blaaaaaargh)
S5 : Orin (WAY longer than Shou, your bombs don't work, and no power ups before Ghost Wheel)
S6 : Yuyuko (her spells are NOT hard, yet they blend TOO well with the background to the point where the teal knives become almost invisible, and I always clipdeath no matter what)
... and Kaguya ! Similar to the above, except a deathbomb completely annihilates a spell card, but it doesn't make her any easier.
EX : Koishi (bearly made it out with one life to spare, and her seemingly easy last spell has a REALLY nasty tendency to flank me)

Isn't this true for Extra bosses in general though? All the ones I've beaten are mostly 'tricky' spellcards with a few tough ones thrown in. I think that's why I'm finding Flandre harder, is most of her cards seem to be 'actual dodging'.
Not all of them, just the most recent ones.
Ran's cards take it to an extreme, though - you either know how to do the attack, or you lose all of your lives. Yukari is based on Ran. QED (wrong battle, but etc.)

Extra: Koishi is the only other EX boss I've gotten to, other than Mokou. Really, though, I can no-death EVERYTHING up until Philosophy of a Hated Person, at which I lose two lives and then I beat Sub. Rose without any issues.

Stage Two: Cirno, but Parsee and Chen came in close.
Stage Three: Guess I'll say Yuugi, but the battle isn't in the best mental state. Otherwise, Alice or China.
Stage Four: Prismriver Sisters
Stage Five: Going to be from PCB. Really should say Reisen or Sanae, but I've seen that battle no more than five times and I'm usually in a good mental state when facing Youmu because of familiarity. The entire Reisen fight feels like a chore. Can't say the same for Sanae, but there's a definite lack of learning her attacks.
Stage Six: Another PCB boss. Super slow bullets and micromemorizable attacks make this battle immensely more perfect consistent than some stage two and even stage one bosses.
Extra: Too close to figure out. Any of the Windows bosses except for Mokou, and I want to add Suwako but just can't.
Hardest:
Stage One: Yamame followed closely by Minoriko.
Stage Two: Kogasa
Stage Three: Ichirin, but not by a large margin.
Stage Four: Patchouli or Satori
Stage Five: Shou, but it feels like a fight with consistent difficult attacks that you can eventually work over. Sakuya with rank, on the other hand...
Stage Six: Kaguya.
Extra: Mokou.

Easiest
Stage 1: Wriggle. She's a joke on every difficulty. Lunatic Wriggle is about as hard as Normal Yamame.
Stage 2: Parsee, I guess. [Large Box and Small Box] can get claustrophobic at times, but nothing she throws at you is actually hard. Mystia's pretty simple too, I don't know why everyone hates her last midspell so much.
Stage 3: Probably China.
Stage 4: Aya with bombspam Murasa, probably. Only her survival card is really difficult, and even that is just memorizing a path for yourself.
Stage 5: Reisen. Lolmemorization
Stage 6: I don't know how, but I randomly just got like six times better at fighting Yuyuko. I have no idea how, but she's really easy now.
Extra: Suwako, except for that fucking second survival card.
Hardest
Stage 1: Tough decision on this, Yamame vs. Nazrin. Nazrin's manageable until her last card, which is utter bullshit on Hard and Lunatic. Yamame's last spellcard is an autobomb for me on H&L, and her opener on Lunatic, oh my god.
Stage 2: Kogasa ;_; Her last two cards are autobombs because by the time I reach them, I'm so low on power that I'd rather bomb them than time them out >:
Stage 3: Yuugi. Mt. Ooe is just insane, and I still have no idea how to do her last midspell. And losing a life to [Shackle a Criminal Can't Break] because you were trying to get the life piece is just humiliating.
Stage 4: Satori. All of them. All of them except ReimuC, she's really easy.
Stage 5: Shou, but mostly because CURVY LASERS and I can barely reach her on Hard, so I don't get to practice much. >:
Stage 6: I haven't played Byakuren on hard, but I can imagine her being the hardest. Scarlet Meister, though...
Extra: Flandre. I've gotten her down to 1DNB and she's still the hardest boss.

I've heard that if you screw up Imperishable Shooting (which is very easy to do), your score is pretty much kaput, which could make Mokou pretty tough for scoring runs.
Aside from that I've got nothing, though to her credit I've yet to beat her for myself (I can only make it to her 3rd card while I can make it to Flandre's 4th).

There are other things to work on that have a much better risk-reward ratio. Well, maybe Imperishable Shooting is some predictable position-based spell so it would eventually become a nonissue. However people want their priorities set.
As for the listing, it's more like, "I didn't take the time to learn the fight and commit it to memory so I still fail her first spell 25% of the time, among other things". Really, all you do is hit the POC for 99% of the items, capture most of the spells, and break two billion just like that. Which is why the score only lands you somewhere in the top 100 for Royalflare.

Unless I'm missing something, not really. The card's base capture value is worth very little, although you can obviously increase it from grazing. You won't increase it a huge amount though (as opposed to say PbP). There aren't any point items after this card, so extra time doesn't increase your score nearly as much as grazing the first non-spell, grazing Honest Man's Death, etc.

Somewhat. Brilliant Dragon Bullet is at least to me harder than anything Eirin has except for Apollo 13 maybe. Even so, i could time Apollo 13 out but not Brilliant Dragon Bullet so i guess Apollo 13 is actually easier than that too. That aside, Kaguya also have some other nasty cards.
Also, i don't get why so many vote for Chen!
How can Kogasa's spells not be considered harder? They hardly belong on Stage 2 and the only thing Chen has that isn't a complete joke is Kimontonkou!

Pentagram Crest comes to mind. That and I get clipped on Chen's nonspells much more than Kogasa's.

Pentagram Crest? That's not really anything special. I capture it consistently. The same for her non-spells. Kogasa's 1st and 2nd spell on Lunatic (sometimes even on Hard too) are much harder than Chen's stuff!!! Of course, Kogasa's non spells are pretty simple tapping so they aren't too much of a threat. ;)

4: Initially I wanted to say Prismriver Sisters, but then I remembered that you could choose the order, so none really. Marisa's Lunatic Asteroid Belt can be a bitch, though.
5: Shou. Stupid fireball bullets.
6: Kaguya. Erin's Apollo 13 and Hourai Elixir spellcards are a pain on Lunatic though.
Ex: Probably Flandre, but only because of my perfectionist approach to the entire stage, where I'd refuse to bomb (except during Patchouli supergraze) and would restart if I died or didn't properly graze the things that I had planned on grazing.
Naming the easiest ones is harder than naming the hardest ones, so no.
