What guns would the Touhou characters use? Here are my thoughts:
The Shrine Maidens: M4A1 (the archetypal good guy's gun)
Marisa: SCAR-H with M-203 grenade launcher (her danmaku is all about power and so are her guns)
Sakuya: FN P90 (the 5.7 * 28 mm can pierce body armor which compliments Sakuya's use of knives.
Youmu: Benelli M4 Super 90 (close combat specialist)
Momiji: Scopeless Mosin-Nagant (think Simo H?yh?)
Flandre: Dual Smith & Wesson Model 500s (these crazy, stupidly overpowered guns need someone just as crazy and stupidly overpowered)

Futo: Blunderbuss
Miko: AR-15
Aya: Gatling gun

Probably something like "Fastest in Gensokyo wants high rate of fire" = gatling gun

Hit and run tactics? Then I would elect the Mini Uzi. And for Ran? An M249 SAW.

Moar ideas:
Patchouli: CheyTac Intervention (camper; called unmoving great library for a reason)
Nitori: ACR with suppressor, ACOG sights, extended mags, and an M26 Modular Accessory Shotgun System (she's an engineer so it would make sense that she would mod the hell out of her gun)
Meiling: QBZ-95 (the Chinese girl needs a Chinese weapon)

Yuugi gets a BFG9000 (Who said it had to be a REAL gun?)
Eirin has a Sniper Rifle because shes the long range assassin type
Reisen has too many guns to name, she has a collection
Cirno gets a super soaker because shes too young to have any real guns!

Lol, your suggestion for Yuugi made my day. For Eirin, I would have given her a PDW since she's a medic but a sniper rifle works just as well.

I could actually see most of the cast potentially with an old-fashioned Flintlock pistol that found it's way into Gensokyo.
I can't see them with anything much more advanced than that; except Nitori/the Kappa; Chiyuri [Who has a lazer gun anyway]; Yumemi; Rika and Rikako. Because SCIENCE!
Could totally see Kogasa with a NERF gun surprising people however.

Flandre: Flamethrower

Reisen: Gyrojet (https://en.wikipedia.org/wiki/Gyrojet) (projectiles get faster instead of slower, can be used in space)
Eirin: Crossbow (because sniper rifles are too loud)
Sanae: A pair of Uzis sprayed blindly, because Sanae gets over-enthusiastic like that. For backup, a shotgun with a frog painted on it.
Yuugi: Sedgley OSS .38 (https://en.wikipedia.org/wiki/Sedgley_OSS_.38)
Utsuho: M-29 Davy Crockett (https://en.wikipedia.org/wiki/Davy_Crockett_%28nuclear_device%29)
Miko: Duckfoot pistol (http://www.dave-cushman.net/shot/ducksfoot.html) so she can shoot ten people at the same time. Also carries a sword with a gun built into it.
Mamizou: Tommy gun (https://en.wikipedia.org/wiki/Thompson_submachine_gun)

What, no dual pistols? Gun kata seems right up Reimu's alley.
Sakuya's silver knives translate easily to silver bullets, and she could have a derringer hidden in her garter.
