Pawn: Shanghai Dolls (cannon fodder)
Knight: Momiji Inubashiri (an agile tengu which means she is able to jump over people)
Bishop: Lily White (both the bishop and Lily White wear pointy hats)
Rook: Tenshi Hinanawi (heavenly peaches has made her body incredibly strong and tough and she's also an earthbender)
Queen: Yukari Yakumo (the queen is the powerhouse of chess and Yukari is the powerhouse of Gensokyo)
King: Unzan (must be male)
Black:
Pawn: Fairy Maids (also cannon fodder)
Knight: Aya Shameimaru (another agile tengu)
Bishop: Lily Black (same reason for Lily White just a color swap)
Rook: Hong Meiling (guardian of the SDM so when you castle, Meiling is guarding the king)
Queen: Shinki (god, ruler and creator of the demonic realm of Makai. she makes a great black queen)
King: Hisoutensoku (looks male so good enough)
Any suggestions?

I think your insistence on the King being male makes the whole set-up extremely bizarre and honestly not worth considering. At the very least Miko would make a great King.
Also, why the heck is Momiji on a different side from Aya? The more I look at this, the less sense it makes.

Seriously speaking, though, I have a hard time picturing any Touhou characters as the King aka someone important who must be protected at all costs.

I think that's overthinking it; the King is just the leader of whatever group. Remilia, Kanako, Byakuren, etc. Although I suppose the most fitting example would be Kaguya with Eirin as Queen.

Metaphorically speaking, I've always thought of the king as an extension of you (the player), i.e. the strategist that gives the orders to the other pieces and only moves when it needs to. So I'd think chessmaster-like people like Yukari are pretty king-like, or maybe just leaders in general.
Not too sure about the rest. The queen is like the powerhouse of the game, so I guess someone who'd take an active role in fighting would be one of the protagonists, maybe. So Yukari would have Reimu as her queen? Which kind of makes sense. Although "Yukari's faction" isn't really large enough to fill the other pieces, I don't think.
It's also a little iffy since there are two rooks, knights, and bishops each but there obviously aren't enough characters that work thematically to fill each piece, but doubling up on the same character for both pieces could be weird too.

Just something silly, but for the Taoist team I'd say Seija could be a knight. They're the only piece that can move over existing pieces, which fits nicely with Seija's making holes in walls ability.

Knight: Koishi (for similar reasons to Seiga)
Rook: Orin
Bishop: Yuugi I guess? (not enough people)
Queen: Utsuho (she's certainly the powerhouse of the group)
King: Satori (explicitly not a fighter, but the leader of the underground)

huh yeah that actually makes a lot of sense, and yoshika is stiffer too in movement, so it would be:

I would argue that the rook be Yuugi because I picture rooks as strong with an enormous physical build. Yuugi fits that description perfectly. The bishop will be Orin because she can control spirits. GM Mihai Suba says "Bad bishops protect good pawns."

Since the Bishop is called a runner or some variation thereof in many (most?) languages, I'd rather envision the tengu as Bishops because of their speed. Going further along the route of physical capabilities, Chen can be considered as a Knight. After all, there's nothing quite as graceful as a cat in predatory leap (https://www.youtube.com/watch?v=5d7aruKYkKs).
Now how about Touhou characters for Ultima pieces?

Well, just in English the word Bishop implies a clergyman, which would be a spiritual advisor or generally smart person. So that's how I've been handling it.

I guess it depends on if you want the Touhous to reflect the chess piece's symbolic representation, or how the piece moves on the board.

If you're talking about spiritual stuff, then Sanae would be a good substitute for a bishop.

Alternatively for bishops, you could play with the idea that they only stick to one color tile the entire game, white or black, or that the ones on opposing colors never cross paths.
For the former, shiki would be good. Can't think of any for the latter.
