"Moe" isn't "cute and endearing," it is "fictional attraction."
Perhaps Remilia isn't as attractive as you thought?

Pink and purple colour scheme, polite demeanor that is sometimes broken by childlike spoiledness, and a fragile ego that is also quite broken. And her sprites from the fighters seal it for me.

I would say moe has many diffrent interpretations,
Mine is based on a nonsexual protective feeling towards a character, them looking cute helps with that but i think they need some innocence and/or flaw(s) as well. (Which flaws would be considered cute is very subjective though.)

Remilia's ego being fragile feels mostly like a fannon thing, i can't remember her losing her cool/charisma in cannon, (Exept that lowblock. :V)
which leaves her personality relatively free from "weakpoints" and she has the strength to back up that personality as well.
This leaves her with only being able to look cute, she fits better in the badass corner imo.

I genuinely find Nitori one of the most moe characters in Touhou. Mainly it's two things. First, her canon attitude towards humans. She's incredibly shy but once you get through that she's friendly to a fault. The second is her appearance, which I find to be one of the most endearing in the series. You might not, that's cool. Of course, there are other factors, like the whole mechanical geek thing and being absolutely broken in every game I've used her in, but mostly it's the first two.

Also Remi's an ass and stuff. Makes her a good character, but not a moe one.

Well next match seems pretty cut and dry. If Sakuya had trouble against Koakuma I can't imagining this going very well for her at all.

But yeah, she's really got moe potential I'd say, and is fairly unique when compared to other characters. We haven't seen a science type since PC-98.

I've seen her in Touhou Labyrinth, Touhou Pocket Wars and Patchcon, and she's pretty kick-ass in those, though in Patchcon she falls behind on higher rounds. She's also in Touhoumon, though I've never played that.

Also surprised by Flan's lack of victory. Am I to believe that she and Koakuma are equal in moe?

Nitori is playable in GoS. This is maybe barely a spoiler because she's one of the super-super-early recruits and you can't not get her.

Ohh, thank you. I've played Labyrinth and patchcon, and they were fun. I gotta try Pocket wars.

GoS sounds really fun... but it requires a much more in-depth japanese knowledge than what I currently have... I wish I had a way to just export the output text and plug it through google translate. D: Is there an english patch in progress, apart from the youtube videos?

The English patch is, for all intents and purposes, done. The only time a lack of extra translation might maybe become an issue is in the middle of combat if you completely forget what elements cancel each other out, and even then it's a turn-based RPG and there are pretty color-coded visual cues for you.

There's a thread in HME devoted to GoS, and I'm pretty sure the first post provides a link to the patch.
And when you play Pocket Wars, Nitori may well be the best character in the game, so you'll certainly get to use her there. She plays much differently than she does in LoT though.

I wouldn't call her the best character in TPWE+...but she has by far the best spellcard.

Also, it's nice that she doesn't bust the game open the same way every time. Labyrinth she was the best damager, TPW the best buffer, FMW the best tank, etc. There's also Nitroid, where she's the only PC, so she's the best one by default.

She papers in Sengoku gensokyo with 'Optical Camouflage" that allows her to live though at least 2 attacks in a game full of near one hit kills.

Edit: Okay now I'm really confused as to what people are voting on. I mean like yeah, I argued against Flandre when she was up against Nue, but at the very least she has naivety and a cute design going for her. Sakuya meanwhile had trouble against a speachless midboss and is now going tit for tat against Flan.

Also, I like it how people sway to canon or fanon in their posts depending on the situation. People, if we were to follow canon (that is, only known material), a lot of "winners" would've lost already.
